CINNAMON FRENCH TOAST

Ingredients:
4 thick slices white bread, crusts removed (can be a few days old)
1 egg
1 tablespoon sugar
1 teaspoon ground cinnamon
125ml (4fl oz) milk
butter for frying
extra sugar for sprinkling
175g (6 fl oz) plain yogurt and fruit to serve

Method:
1. Cut each slice of bread into 2 or 3 rectangles
2. In a bowl beat the egg, sugar, cinnamon and milk and transfer to a flat dish
3. Melt about a tablespoon of butter in a frying pan over a medium heat
4. Put the bread into the milk mixture then turn it over so it covers both sides
5. Whilst still in the dish, sprinkle one side with sugar to taste and transfer, sugar side down, into the frying pan
6. Fry for about 3-4 minutes until the underside is golden
7. Sprinkle more sugar on the top and turn over and cook until golden
8. Remove from the frying pan and briefly stand on kitchen paper before serving
