Blackberry Yogurt Pudding

Try this delicious, quick and easy BLACKBERRY YOGURT PUDDING that the whole family will love! No mixers are required so it’s a great one to get the kids to help... why not try it for Mother’s Day?


150ml (¼ pint) Greek or natural yogurt
175g (6 oz) caster sugar
120g (4½ oz) melted butter
2 beaten eggs
175g (6oz) plain flour
1½ teaspoons baking powder
150g (5oz) fresh blackberries
Icing sugar to dust


1. Pre-heat the oven to 180°C/350°/Gas 4
2. Mix together the yogurt, sugar, melted butter and eggs
3. Sift the flour and baking powder together in a bowl and pour in the yogurt mixture and combine. Carefully stir in 110g (4oz) of the blackberries
4. Pour the mixture into an 18cm (7”) greased and lined round cake tin (or you could use a pyrex dish)
5. Bake for 50 minutes, or until risen and just firm
6. Serve with a dusting of icing sugar and the remaining blackberries

This is a really light and moist sponge which makes it perfect for a dessert or tea time treat.
